How can I spice up songs as a beginner?

Hi,

I’m new to rockclass101. I’m self-taught and have been playing uke for about 1 year now. I’m wondering how I could spice up songs without making it too difficult. I love LP’s songs and have been playing her song “Muddy Waters” on my uke for some time (I’m using a very simple strumming):

I also like her cover of “Don’t Let Me Down” by The Chainsmokers:

I’d be grateful for any ideas on how I can spice up my playing of these two songs.
